This is a great tool if you are making large batches of pickles. I make ume pickles with apricots. This pickle maker allows me to make the apricot ume without the use of weights to extract the fluids. It was kind of pricey but was worth it. I would think it would also be useful if you are making smaller batches of kimchi.

Thank you for selling this Japanese must-have kitchen container. I am successfully making pickled napa cabbage and kim chi. The only problem that I have is the fact that it came with a crack on the bottom. I quickly patched it up with industrial-strength tape. Other than that 1 blip, this works exactly as it is intended. Highly recommend.

It has its pluses and minuses.The biggest minus is that it isn’t sealed at the rim, this causes it to leak unless you carry it with waitress precision, a tough job when it’s full and heavy and the liquid splashes around. This also means, it’s not so great for fermenting outside the fridge because the fruit flies can find their way in and end up floating around on the surface.The press part works although doesn’t feel the highest of quality. Also when the vessel it full and you want to put it in the fridge the dial protrudes quite high making it hard to fit on some shelves.Despite all this I’ve been eagerly and effectively making pickles and I haven’t found anything comparable yet though might try a stoneware pickle crock from Lee Valley.

Being BPA free was important. Made a sizeable batch of karashina (japanese mustard greens) as soon as the press arrived. Worked perfectly. Should be good for years if I don't drop it.I am pleased with the purchase and will note, it would be good if plate was removable from the pressure knob with spring for more thorough cleaning.
