Je passe d'une Naniwa professional qui s'est brisée après une chute à cette Suehiro en 3000 pour les deux et je dois dire que la Suehiro me séduit davantage que la Naniwa, particulièrement sur les lames carbone (donc la plupart des couteaux japonais pour lesquel j'ai besoin de cette pierre).Elle n'est pas "splash and go" comme la Naniwa mais il lui faut peu de temps de trempage. L'accroche est excellente et l'affûtage aisé. Elle est assez rapide et ne creuse pas facilement (moins qu'une King que j'ai offerte). La largeur supérieure à celle de la Naniwa la rend très adaptée aux grandes lames comme aux petites.Le rapport qualité/prix est bon même si elle n'est pas donnée.

Packaging very poor in a lightweight plastic bag. Stone Haa sustained damage.Stone will be superb to use.

Most sharpening's usually begin on a 1000 grit stone. Then most jump straight into a 5-6K for a nice polish/finish. But 3K stones can do wonders if you need a gentle polish and a nice touch up for your knives. If you're like me after about 1-2 weeks of restaurant work, my knives are never really dull, but they just need a quick tune up to bring back that initial razor sharpness. Breaking out a 1K stone to tune up your knives is fine, but over time I find it just removes too much metal. And that over a long time, will just further reduce the lifespan of your knives. So a 3K whetstone is perfect for a clean touch up without removing too much metal.This is a soaking stone, so make sure you soak it for at least 15-30mins before use. The stone itself is on the softer side but its still feels dense enough to withstand dishing. You will still need to flatten it periodically. This stone even at 3000 grit, cuts extremely well. I was able to achieve a burr after 2-3 passes. It provides really good feedback, almost like a King 1K stone. Not as aggressive as a 1-2K but it feels really good for a 3K stone with a decent polish. There is a little load up during sharpening so make sure to clean it down with the included nagura stone. I achieved really good results especially on my carbon steel knives.Overall, this is a fantastic 3K stone. This stone will make a great addition to any whetstone collector, knife nerd or restaurant junkie looking to tune their knives up. I can only think of one stone that is better and that is the Naniwa/Chosera 3K stone, but the Suehiro Ouka is almost >50% cheaper, with close to similar results.

This is one bad ass stone. It's at least 3 k and with the slurry I'd give it at least an if you work the slurry right.v Best stone in that grit I've ever seen

This is a soaking stone, but it does not take too long to have the necessary moisture. It cuts very well and gives good feedback. Great kazumi finish.I would give it 4 or 5 stars if not for the issue that it came cracked from very poor packaging. Shame on the seller.
